TERNERA CON BAMBÚ Y SETAS CHINAS

Hoy os traemos una receta que muchos ya habréis probado en restaurantes chinos. Seguro que siempre os habéis preguntado cómo se prepara este delicioso plato. Pues aquí os traemos la receta de ternera con bambú y setas chinas para que podáis disfrutar de él también en casa y sorprender a vuestros amigo y familiares.

INGREDIENTES: (4 PERSONAS)

  • 400 de gramos de carne de ternera en filetes (que cortaremos en tiras)
  • Una pizca de sal
  • 2 dientes de Ajo picado
  • 1 cebolla mediana
  • 2 cm de raíz de Jengibre picado
  • 2 cucharadas de aceite de sésamo (o cualquier otro aceite neutro en su defecto)
  • 200 gr de Setas shiitake
  • 2 cucharadas de salsa de soja
  • 1 cucharada de almidón de maíz (Maizena)
  • 1 cucharada de azúcar

PREPARACIÓN:

  1. Corta y sala la carne, corta también el bambú en trozos del tamaño de un bocado y prepara las setas.
  2. Precalienta aceite en una sartén y cuando esté bien caliente, saltea la ternera cortado a tiras unos minutos y reserva. Añade la cebolla, el ajo bien picado y el jengibre, saltéalos unos minutos hasta que suelten aroma.
  3. Añade los brotes de bambú y las setas, saltea unos minutos e incorpora ahora la carne que tenías reservada, la salsa de soja y el azúcar.
  4. En un bol mezcla fécula de maíz con un poco de agua, disuélvelo bien y viértelo en la sartén. Con esto conseguirás que la salsa coja textura y espese.
  5. Sirve caliente y disfruta a acompañado de un delicioso arroz jazmín preparado en tu vaporera de bambú.

CONSEJOS.

Las setas shiitake son cada vez más fáciles de encontrar tanto en supermercados cercanos como en supermercados asiáticos. Vienen en varias presentaciones, frescas, congeladas, en conserva o secas. En el caso de que las utilices seca os sugerimos que adaptes las cantidades, con aproximadamente un tercio de lascantidad es suficiente. En este caso es necesario que las dejes remojar durante al menos 30 minutos. Lo ideas es ponerlas a remojo y mientras lavas, cortas y preparas el resto de ingredientes, así cuando llegue la hora de incorporarlas las tendrás listas.

Puedes sustituir la ternera por cerdo o pollo si lo prefieres.

Esta estupenda versión de la tradicional sopa de miso japonesa es ideal para aquellos días en los que nos apetece una sopa reconfortante.

En este caso añadiremos espinacas, setas y nuestros deliciosos brotes de bambú, pero también queda riquísima con unas algas deshidratadas, puerro, tofu,… las opciones son infinitas.

Para que sea más consistente la hemos convertido en un plato único añadiendo los fideos chinos, pero si buscáis una opción más ligera, también está estupenda sin ellos para poder disfrutarla como un primer plato.

Encontrar pasta de miso ya no es un problema la tienen en supermercados asiáticos, e incluso puedes encontrar sopa de miso instantánea en una conocida cadena de supermercado.

INGREDIENTES:

  • 90 gramos de hojas de espinaca.
  • 8 setas shiitake.
  • 1 zanahoria grande (cortada fina).
  • 150 gr de brotes de bambú (troceado).
  • 1 diente de ajo (picado).
  • 5 cucharadas de pasta de miso.
  • 2 ,5 cm de raíz de jengibre (pelado y cortado).
  • 360 gr de tallarines o fideos chinos.
  • 2 cucharadas de cebollino (cortado fino).
  • 2 litros de caldo vegetal.

PREPARACIÓN:

  1. Prepara los tallarines o fideos según las indicaciones del fabricante, no dejes que queden pasados, ya que arruinarían la textura del plato.
  2. En una olla grande pon el caldo, el jengibre y el ajo a hervir a fuego medio. Separa una taza de caldo disuelve la pasta de miso.
  3. Vuelve a añadir este caldo con el miso disuelto a la olla y remueve; añade las zanahorias cortadas, el bambú y las setas. Cocina hasta que las zanahorias están listas (suaves, pero al dente).
  4. Por ultimo, añade los fideos o tallarines, las espinacas lavadas y el cebollino.
  5. Remover y apartamos del fuego, ya que las espinacas son muy delicadas y no queremos que se nos pasen, con el calor residual terminarán de cocinarse.
  6. Servir muy caliente.
